Parmesan-Roasted Zucchini!

I cannot even tell you how excited I am that spring and summer are finally here!  Here in TN that means it is almost time for my weekly Farmer’s Market trips!  This time of year also happens to be when a lot of my favorite fruits and vegetables are in season.  One of my favorite veggies is zucchini; it’s easy to prepare in a number of ways. This recipe is one of my absolute favorites! It only takes about 5 minutes to prepare, 15 minutes to cook and has great flavor! I found the original recipe on www.budgetsavvydiva.com but I have modified it slightly.

Ingredients:

  • 2-3 Zucchini squash, cut in half lengthwise with ends removed
  • Olive Oil
  • Sea Salt or Pink Himalayan Salt
  • Black Pepper
  • Garlic Powder
  • Shredded Parmesan Cheese

Instructions:Zucchini

  1. Preheat oven to 400.
  2. Cover a cookie sheet with parchment paper (or use can use tin foil).
  3. Brush each piece of zucchini with olive oil then sprinkle with salt, pepper and garlic powder.
  4. Top with cheese.
  5. Bake at 400 for about 15 minutes or until zucchini is tender.
  6. ENJOY!!
