I love pizza. Like, I could eat pizza once a week for the rest of my life and probably not get sick of it. You know what I mean? We have two favorite go-to cheat meals in our house: pizza & Mexican. So I have made it my mission to try and find healthier version of both so we can get our fix without feeling guilty.
I’ve had Buffalo Chicken Pizza a few times but typically it has had ranch dressing on it, which I love btw. But, ranch dressing isn’t really part of my meal plan unless I take the time to make a healthy version myself. I know there are 21 Day Fix-approved recipes out there so I might just have to try that! Stay tuned.
For these pizzas I used the flatbreads pictured below that I found in the bakery section of my local grocery store. You can also use tortillas or any other wraps you have in your house. We do not eat any white bread in our house so I always choose whole grain. This time around I used ricotta as the “sauce” but I’m thinking I need to try a healthier ranch dressing next time around! FLATBREAD BUFFALO CHICKEN PIZZA
INGREDIENTS
- olive oil (just a few drops)
- 1 whole grain flatbread (or tortilla, wrap, etc.)
- 1/2 cup diced chicken
- 1/4 cup Frank’s hot sauce
- 2 T ricotta cheese
- 2 T blue cheese
- 1/8- 1/4 cup shredded mozzarella cheese
- sliced red onion
DIRECTIONS
- Preheat oven to 400°. Brush flatbread with a few drops of olive oil and toast for 2-4 minutes or just until it begins to get crispy. For this part I place the flatbread right on the oven rack. If you’re using a thinner tortilla you might need to put it on a baking sheet.
- While oven is preheating, cook diced chicken in a skillet over medium heat with a few drops of olive oil. Once cooked add the hot sauce and cook a few more minutes to let flavor sink in.
- Spread the 2T ricotta over the crispy flatbread. Sprinkle the blue cheese on top of that. Add the diced red onion and chicken. Top with the shredded mozzarella.
- Place pizza on a baking sheet and cook for 4-5 minutes or until cheese melts and browns slightly.
