Grilled Honey Lime Cilantro Chicken

Who else is super pumped that it’s GRILLING season!  We grill every chance we get; there’s just something about the flavor that can’t be beat!  We love to grill chicken but I am always looking for ways to spice things up a bit.  We eat chicken pretty frequently since it’s a healthier option so we gotta keep it interesting!  We tried this recipe this week and LOVED it! This marinade took just a few minutes to make and the chicken was really flavorful and juicy! I paired it with another recipe I found on Pinterest; Cilantro-Lime Rice.

Grilled Honey Lime Cilantro Chicken

Ingredients

  • 2 lbs boneless chicken breasts
  • 1/4 cup lime juice (I squeezed some fresh limes but you can use bottled)
  • 1/2 cup honey
  • 2 Tbsp Bragg’s Liquid Aminos (or soy sauce)
  • 1 Tbsp olive oil
  • 2-3 tsp minced garlic
  • 1/2 cup chopped cilantro
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Put chicken in a ziplock bag or in a glass dish with a lid. In a small bowl combine lime juice, honey, Bragg’s aminos, olive oil, minced garlic, cilantro, salt and pepper. Pour the marinade over the chicken and let marinade for at least 3 hours or overnight.
  2. Grill on medium-high to high or around 450. Cook about 12 minutes per side.  Butterfly each breast and grill another 2 minutes each.  *NOTE: Every grill cooks differently so you might need to adjust your cook time. Cook time also depends on the thickness of each breast.
  3. Sprinkle some chopped cilantro on each chicken breast, if desired.
  4. Enjoy!

We paired this chicken with Cilantro-Lime Rice.  I followed this recipe but I did substitute brown rice for white rice.

I hope you enjoy this recipe as much as we did!

Quinoa Pizza

Is there anyone who doesn’t love PIZZA? If there is I have yet to meet him/her!  Pizza is our top go-to on nights we don’t feel like cooking. Unfortunately, when you order pizza from a restaurant you can’t control how it’s cooked and what ingredients are used (to a certain extent).  A few weeks ago… Continue Reading

Cajun Shrimp Alfredo Pasta

I LOVE seafood. Like I really love it. Every year when we go to Florida I eat it at least once a day since it’s actually fresh.  The good thing about seafood is that it is also really healthy as long as you don’t deep fry it, lol.  My struggle with seafood has always been… Continue Reading
